The parathe wali gali in Chandni Chowk, Delhi, is the stuff of legends. The narrow and cramped lanes of Delhi's most famous market come alive with the smell of oil, of parathas being fried and curry stewing. The smell is the first thing that overwhelms you as you enter the lane, the crowd is the next. Albeit the crowd, these narrow lanes are one of the first things that come up in a conversation about old Delhi and its flavours and rightly so.
Tucked away among the bustle of people shopping for wedding dresses, sarees and suits, the parathe wali gali hums with swarm of people. These people line outside generations old establishments, waiting patiently through summer heat and winter chill for a plateful of warm flaky paratha.
One such establishment in the 'gali' is Pt. Gaya Prasad Shiv Charan Paranthe Wale. A paratha shop that has been in business for six generations and is touted to have served the likes of Pt. Jawaharlal Nehru, Indira Gandhi and Akshay Kumar.
The outlet serves some of the most over the top variants of paranthas we've heard of, rounding off to an overwhelming 26 different kinds of parathas. Though their list includes classics such as aloo, gobhi, mix veg, paneer, mooli dal and besan, they also have a plethora of parathas we've never heard of.
They serve kaju, meva, bhindi, rabri, kela, neembu and even a karela paratha!
Now that is something we can surely say we've never had.
Though, the rabri, meva and chini parathas are surely more of deep fried dessert, you'll have to agree that the variants are the best way to round off any meal.
People, especially swear by the combination of thick rabri stuffed into a deep fried paratha. The paratha, it is said, works like a charm with the tangy pickles and the spicy curry.
