Delhi and Lucknow share a lot in common - culture, royal history but most notably their passion for food. And when it comes to food, you’ll find people of both the cities fighting tooth and nail to prove that theirs is a better cuisine.

Daniell’s Tavern at The Imperial in Delhi has organised a food festival that does exactly that; it brings the two cultures and their foods together, but tied in an epic battle - The Clash of The Titans- Dilli Ka Swad and Lucknawi Andaz.

The battle is among two chefs, Chef Mirza Munnawar Baig from Lucknow and Chef Ved Prakash from Delhi. Both the chefs are masters of their respective cuisines, trained by their fathers, they bring to the table recipes that are handed down and perfected through generations of khansamas and rasoiyas.

The Nawabhi-Awadhi and the Rajasi-Mughalayi cuisines of Lucknow and Delhi respectively, sound similar, yet cannot be more different. The awadhi cuisine is heavy on flavors, it is more about making the food aromatic than making it heavy on spice. Whereas the dilli-wala-khana is heavy on the spice. The taste that the world is a fan of, is a mix of the Mughalayi and Punjabi, which is rich with gravies and heavily spiced sauces.

The two chefs are trying to recreate the magic of traditionally cooked food and in doing so preserving the cultures they are from. With dishes like Gosht ki Ghilawat, Kakori kebabs, Dum Biryani, and Chakunder aur Raamdana ki tikki by Chef Mirza (Lucknow) and Guchhi Mussalam, Mahi Nazakat, Dilli 6 ka Mutton Korma and Purani Dilli ka Shahi Tukda by Chef Ved , the festival has already created a buzz and we can’t wait to see who reigns supreme.
