Moroccan food is probably one of the healthiest and the most loved cuisines out there. With a mix of floral and sweet smelling spices, it is also distinctly similar to a lot of Indian food. Currently, Morrocan food is all the rage, the beautiful flavours combined with the health benefits, making it wildly popular. The Moroccan Food Festival that is currently underway in ITC Maurya, Delhi should be on top of your to do list.

Morocco and India’ s cuisine are tied together with a common spice thread. In the olden days, when India was the hub of all spice imports, a ton of spices were exported from the country to Europe and the Middle East. Morocco fell right on the route, hence you can find a sort of similarity in both cuisine, the extensive use of spice being one and cooking methods being the other.

The Moroccan Food Festival, currently taking place in ITC Maurya is serving a buffet of over 100 authentic dishes prepared the traditional way, some even in the earthen dish called tajine- an earthen dish with a tall conical lid. Tajine cooking usually involves slow cooked savoury stews made with a combination of either thin sliced meats, poultry or fish along with vegetables and fruits.

The common cooking spices include, pepper, saffron, ginger, cumin, turmeric, cinnamon, paprika, chili, herbs such as parsley, mint, and coriander. You can also find a distinct use of lemon and citrus and citrine fruits in the cooking process.

The cuisine includes a variety of dips, salads and delicately-slow cooked meats, lamb being a prominent one. On display to try and test were several dishes, including a number of tajines, including slow cooked lamb and lentils, chicken prepared with cured lemon, lamb made with sweet and sour prunes and various others.

A variety of salads included, taktouka, zaalouk, chickpea and quinoa, cous-cous with pomegranate which is prepared with a blend of saffron, lime juice, olive oil and garlic, steamed and cured until it is fluffy.

Several pancakes and fluffy-fresh baked breads are also served at the buffet. Not only that, you can also taste a variety of desserts, ranging from Briouat Pasty made with an almond paste and soaked in honey, to the exquisite flower shaped Chebakia cookies, made with sesame dough.

After a pause of two months due to the COVID-19 crisis at hand, the centre has allowed domestic flight operations but this time, there are new rules and regulations to be followed.
