We caught up with Jaysukhbhai Joliya, the owner of this popular eatery. After serving up these beloved winter treats in Surat for over a decade, he decided to bring his expertise to Ahmedabad last year. Here’s a glimpse of what Joliya Farm has to offer.

If you’re wondering what ponk is, let’s set the record straight. Ponk is made from jowar millets or sorghum grains, and comes in two forms: green ponk (freshly harvested) and dry ponk (a more mature and flavourful variety). This seasonal delight is packed with protein and fibre, making it great for muscle building and cell regeneration. It's also loaded with essential vitamins, minerals, and antioxidants, including calcium, copper, zinc, iron, and vitamins B1, B2, B5, and B6.

At Joliya Farm, these varieties star in a range of mouthwatering dishes, such as Ponk Chaat, Ponk Vada, Ponk Ghughra, and even Pudla and Petish. Its Ponk Chaat is a real treat for the taste buds. Imagine a combination of fresh ponk, crispy sev, onions, tomatoes, lemon, and just the right blend of spices. It's light, healthy, and bursting with flavours.

For those craving a snack with a bit more crunch, Ponk Vada is the perfect choice. These crispy delights are made from a blend of besan, khaman, and ponk (both green and dry), spiced with ginger, garlic, and onions, then fried to golden perfection. Of course, they're served with a side of tangy green chutney for dipping!

Jaysukhbhai mentioned that jowar ponk is available from December to February. By the end of January, the ponk dishes will be gone for the season, replaced by wheat ponk. So, if you want to savour one last taste of winter, now’s your chance to visit Joliya Farm!
