Chef Ashwin Singh’s earliest memories of food began in his mother’s kitchen, a connection that now finds its way into Fitour, an intimate 14-seat dining speakeasy in Bandra West, Mumbai. Opened on October 4, 2026, the concept by Aspect Hospitality brings together Singh’s experience at Taj, Marriott, Gaggan and Masque in an 18-course tasting menu titled Verses. Moving through Indian culinary traditions, the menu pairs personal memories and regional flavours with wine and music. 

With no exterior signage, no walk-ins and just one seating per service, Fitour asks diners to book ahead and let each course tell its story.

An intimate space with a story to tell

What distinguishes Fitour from conventional fine-dining establishments in Mumbai is its multi-sensory, speakeasy-inspired format and blind tasting approach. Guests enter an unbranded space designed with raw terracotta tiles, woven natural fibres, rippling glass, and a central Nostalgia Wall displaying handwritten recipes, childhood photographs, and custom artworks. 

A tasting menu with a plot twist

With only 14 seats and one seating per service, the experience unfolds gradually. The real intrigue, however, begins at the table. Diners taste each course and try to identify its ingredients before the composition is revealed. Think Ratatouille, where a bite can unlock a memory, except here, the story behind the dish comes after the first taste.

The room plays its part, too. Shifting lights, ambient soundscapes and subtle fragrances accompany the meal, while jars of house-made pickles and spices bring elements of the kitchen into view.

The format has parallels with Ultraviolet by Paul Pairet, where sound, projections and other sensory elements accompany a tightly controlled dining experience. Intimate omakase counters and chefs' tables in cities such as Tokyo, London and New York also place emphasis on the chef's hand and the progression of each course. Fitour brings a distinctly Indian perspective to this format and how!
