Calling it “New” Gyani Ji Ka Dhaba is a bit rich for a place with a legendary old-school reputation, but that’s the actual story here: the name updated, the setup went clean and pure vegetarian, and somehow the food didn’t lose whatever made it a legend in the first place. Dal Fry with Butter still gets talked about like a personal achievement, Baigan Bharta and Dum Aloo hold their own too. Old soul, new kitchen. Rare that both halves of that trade actually work out.

“Indian Dhaba” is about as generic a name as a place can pick, and yet it’s apparently specific enough about one thing, vegans and vegetarians actually seek this one out for classic highway Dal, Roti, and Sabzi done right. No fancy fusion, no gimmick menu, just the basics executed the way a highway stop should. Add in enough space to make it an actual family stop rather than a squeeze, and the plain name starts making a strange kind of sense, no branding needed when the food and the room both deliver.

UP 35 Highway Dhaba
Truckers and families don’t usually want to sit at the same dhaba table, and UP 35 Highway Dhaba solved that by not making them, three separate sections, one built for families, one for long-haul drivers, one just open for whoever. Oddly thoughtful for a highway stop. The food doesn’t coast on the seating plan either: pure vegetarian North Indian classics, Sev Tamatar and Kadhai Paneer leading the order sheet, chai brewed slow enough that it’s clearly not an afterthought. Practical dhaba, unexpectedly good food, rare combination.

“Fauji” implies discipline, order, maybe a curfew. Fauji Dhaba’s actual clientele has other plans, it’s where Kanpur’s students and youth crowd show up late in the evening for cravings that don’t respect anyone’s bedtime, semi-urban roadside setup and all. The menu backs both sides of the aisle, veg and a genuinely solid non-veg lineup, with Egg Curry and Chicken Masala doing the heavy lifting at prices that don’t wreck a student budget. Disciplined name, delightfully undisciplined hours. Somehow it works.

Hotel Mandakini Destination & Dhaba
Calling itself a “Destination” is a stretch for a place that’s really about Tandoori Naan and Paneer Bhurji hitting the table at the right moment, but Hotel Mandakini’s regular commuters clearly don’t mind the branding overreach, because they keep coming back anyway. Pure vegetarian throughout, with Dal Khichdi as the comfort-food fallback when nothing else sounds right. It’s not really a destination in the tourist-brochure sense. It’s a dhaba that regulars trust, which is arguably the better compliment.
