"Blessed" is a heavy word to hang over a chaap stall. Blessed Chaap Wala at The Chaap Rasoi carries it without flinching. The veg tandoori chaap comes off the flame with the kind of char that settles arguments early. The malai masala chaap is creamy and unhurried, the sort of dish you slow down for without meaning to. The achari chaap shows up last, tangy and a little cheeky, like it knows it's the one you'll remember.

Malai chaap has a reputation for being the mild one on the menu. Sardar G Malai Chaap Junction doesn't bother with mild. The dilruba chaap is rich and creamy with a little swagger, the pudina chaap cuts through it with a fresh, green bite, and the shahi mixture chaap piles on flavours without apologising. The veg fish finger is the crisp detour, golden outside and soft inside. You'll order one plate to start, the table will quietly order three more.

Gupta Veg Biryani has a plate of rice in its name and a tandoor in its heart. The tandoori stuffed malai chaap is soft and creamy, with a filling you only find once you bite in. The achaari chaap butter is tangy and rich, the kind that leaves a little shine on your fingers. The haryali chaap butter brings mint and coriander to cool it all down. The biryani can wait its turn.
