The falafel version goes fully vegetarian without feeling like a backup option, crunchy, spiced, unbothered by the meat-heavy competition. And the chicken kathi shawarma roll pulls off the rare trick of merging two street-food icons without either one losing character. This isn’t a shawarma spot playing safe, it’s one betting the format can stretch further than anyone assumed.

Arabian Broost Chicken took one look at Kanpur’s shawarma scene and decided the missing ingredient was crunch.
