Although most biryani places make rice the supporting character, at Idrees rice is treated like the hero it is. Idrees Hotel makes its biryani using kada basmati, old long grain rice which fluffs up when hydrated and gets the most stunning soft and yet distinct texture. What’s more is that this rice is cooked separately, flavoured by rich whole spices, which release their oils and aromas yet leave the rice tasting light and not overpowering.
It is then cooked in a broth of sorts to ensure the flavour of meat penetrates every grain, which is why, in the absence of meat, the biryani is still as delicious as it can be. Coming to the meat, while most biryanis tend to make their meats oily, soaking in spices and overly soft, at Idrees the meat retains its texture, it is once again cooked with whole spices which flavour the meat from the insides and add no additional layer to coat it.
